Freezer cure (curing in the freezer)

I will but maybe at the end of the year or so.

First gotta get a frost-free freezer and them shits is expensive :D

slow freezing makes big water-ice-crystals , visibly rupturing cells like an exploding air-baloon
and producing mush

on the other hand
shock frosting/freezing , meaning very fast temperature changes into the "minus" region, makes very small water-ice-crystals , of course , also rupturing cell walls, but more gently and not producing mush consistency

had to post this, so that no info gets lost into the realms of inet

cells will get destroyed no matter if you shock frost them or freeze them slowly. Thats why you take dried material. If there is barely any water in cells, no cells will explode like you mentioned.

If you vacuum your herb-bags you will get no contamination by meat or icecream or stuff.
